El Dragonet olive oil is born in a Mediterranean dry-farmed landscape in Castellón, among centenary olive trees cultivated without agricultural intensification.

Olive trees thrive in poor, stony soils, nourished solely by the sun and rain. This environmental austerity limits yield, yet results in a superior concentration of the fruit's natural properties.
Characterized by slow growth and limited production, these trees develop their distinctive, gnarled structures over decades. Each tree stands as a unique testament to the perfect harmony between climate, terroir, and the passage of time.
Olives are picked at optimal maturity, prioritising fruit integrity and avoiding oxidation or prolonged storage.
Only the quantity that can be processed immediately is harvested.
